Homemade Special K Bars with peanut butter cereal layers and a chocolate-butterscotch topping stacked on a ceramic plate

Special K Bars; easy, no-bake cookie bars made with chocolate, peanut butter, and butterscotch. Oh, and Special K cereal. Try them with Rice Crispies, then they’re called Scotcheroos.

This is a delicious, old timey recipe that’s been a favorite in our family forever. And for good reason, these bars are so quick and easy and completely delicious. No-bake and only 6 ingredients!

My hubby introduced me to Special K Bars after we got married. His mom made them for him every year at Christmas, without fail. They are his absolute favorite holiday treat.

When his mom passed away a couple of years ago, I started making them for him. I think we love certain recipes not only for how they taste, but also for the happy memories they invoke.

This is my mother-in-law’s recipe box and her original, hand-written recipe card.

I left the original pretty much intact (something I rarely do with recipes). I just rewrote it a little bit to make it easier to follow.

First, spray a 9 x 13 inch pan with cooking spray and set aside.

Bring the granulated sugar and corn syrup to boil in a large saucepan over medium-high to high heat (I always use my ugly old fudge pot, see Easy No Fail Fudge).

Remove from heat and add crunchy peanut butter. Stir until combined.

Now it’s time to bring out your big girl (or boy) muscles. Add the Special K and stir until well coated with the peanut butter mixture. Spread in the prepared pan. It’s very sticky so use a silicone spatula or lightly oiled fingers if you need to.

Melt the chips in a bowl over simmering water. Then spread on top of the cereal mixture.

Chill in refrigerator for an hour to set then take a big, sharp knife and cut into 24 bars.

Servings: 24 bars

Ingredients
  

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 1/2 cup crunchy peanut butter
  • 5 cups Special K cereal
  • 1 11 ounce bag Butterscotch chips
  • 6 ounces semi-sweet chocolate chips about 1 cup

Method
 

  1. Bring sugar and corn syrup to a boil; remove from heat. Add peanut butter and stir until well combined.
  2. Add cereal; mix until all of the cereal is coated. Spread in prepared 9 x 13 inch pan.
  3. In a bowl over simmering water, melt chips. Spread evenly over cereal mixture.
  4. Chill in the refrigerator for 1 hour to set completely. Using a sharp knife, cut into 24 bars.

Notes

After chilling and cutting, bars can be stored at room temperature.
