I can understand why people would get frustrated trying to eat local in the winter. Many of the healthy cookbooks call for produce that’s out of season, and many of the farm to table cookbooks have a very scant section for winter root vegetables. And so I find myself missing all the recipes from Simply in Season.
Yes, I could make them again, but then what would I have to blog about? That shouldn’t stop you from making them though! While I continue my quest for root vegetable recipes, here are some of my favorites from last year:

Of course, the easiest thing to do with root vegetables is to roast them. In colder climates, you can stash a bag or two of favorites like potatoes, carrots, turnips, parsnips, etc. in your garage so you always have something to throw in the oven or the slow cooker with a roast.
