This easy 5-Ingredient slow cooker salsa chicken is loaded with black beans, corn, tomatoes, and more! Practically no prep, just dump and go!

It’s a great meal-prep recipe to have on hand for tacos, burritos, enchiladas, or over rice.

Who doesn’t love an easy recipe?! Well, this one is one of the easiest, and tastiest, ever!

It’s ready in as little as 4 hours (on high) or you can leave it all day (on low) and live your life. It’s practically impossible to overcook.

Today I’m serving it over rice, but it’s fantastic in tacos, burritos, and enchiladas too!

And it freezes well, so a big batch like this will set you up for a while. I save it in 2-cup portions in freezer bags.

A bit about the ingredients…

I don’t have a set weight for the chicken. Use enough to cover the bottom of the slow cooker in a single layer, 3-4 breasts should do the trick.

I like this brand of black bean and corn salsa. It’s nice and chunky, you can actually see the corn and black beans. I get it at my local Walmart.

If you use a different brand, just try to get about the same size jar. Or use about 2 cups of your own homemade.

In addition to the black bean and corn salsa, this recipe uses a chunky tomato salsa for an extra hit of flavor.

I like a medium heat salsa, but you can use mild or hot according to your own personal taste.

I stir in some fresh cilantro at the end because, honestly, I just love the stuff!

If you’re not quite as enthusiastic about it, just leave it out.

Start by spraying your slow cooker with some cooking spray, then put the chicken in the bottom.

Next, sprinkle on the cumin.

Then spoon on the chunky salsa.

And finally the black bean and corn salsa.

Pop on the lid and cook it on high for about 4 hours or low for 6 hours.

At the end of the cooking time remove the lid and shred the chicken.

Then sprinkle on the cilantro…

…and give it a good stir.

Serve your salsa chicken with your favorite toppings. I like extra cilantro and a squeeze of lime. And possibly some cheese.

Black Bean and Corn Salsa Chicken

Ingredients
  

  • 3-4 boneless skinless chicken breasts or thighs or both
  • 1 teaspoon ground cumin
  • 1 cup chunky salsa
  • 1 16 ounce jar black bean & corn salsa
  • fresh cilantro chopped

Method
 

  1. Spray slow cooker with cooking spray. Place chicken in bottom in single layer.Sprinkle with cumin. Spoon on tomato salsa and black bean and corn salsa.
  2. Cover and cook on low for 6 hours or high for 4 hours or until very tender. Remove lid and shred chicken. Add chopped cilantro and stir to combine.
