I never in a million years would have made this if I hadn’t decided to cook all the recipes from Simply in Season. Sometimes it pays to take a chance!

When I saw this recipe in Simply in Season, it reminded me of a favorite stir fry recipe that I used to make when I was first learning how to cook, 10 years ago. So I adapted it to what I remembered.

I can always tell when DH likes the recipe, because there are no leftovers! This is a “soup”er soup that tastes like summer!

I’ll bet you can guess the secret ingredient! In the summer, it’s zucchini. In the winter, it can be beets. Because if you add vegetables, it cancels out all the calories, right?

OK so I didn’t have enough tomatoes to make this as written. I sort of ate the handful of ripe cherry tomatoes that I had picked for this recipe. Oops. So I added some chopped kale. This is one of those recipes that I love – it provides the mix and max concept that I’m still trying to master. Someday I want to be able to look into my cupboard/frig/freezer and whip up something that tastes great with whatever ingredients happen to be on hand.
