This is one of those “whatever fruit you have will work” recipes from Simply in Season. Since I had a ton of peaches (as you’ll see throughout the rest of the week as I post several peach recipes) I decided to make a yogurt peach pie.

Blueberry Raspberry Jam

DH doesn’t like jam, but this recipe was in Simply in Season so I had to make it. I’m glad I did! Blueberry Raspberry Jam is summer in a jar.

Slow Cooker Enchiladas

This is quite a versatile recipe; you can make it in a slow cooker, or bake it, or microwave it if you really want to. It’s a great way to sneak in more vegetables.

I remember the first time I got a Napa cabbage from my CSA. It was HUGE! And what the heck would I do with it? I used some in stir fry, some in salads; it’s really quite versatile. And this Asian salad is perfect for potlucks!

This was one of those recipes from Simply in Season that did not provide very good instructions. It said to simmer the fish in the sauce, but it didn’t tell you to add water. So DH looked up how to poach fish on the internet and figured it out.
