Strawberry (or Peach or Blueberry) Ice Cream (without an ice cream maker!)

Since I had peaches, I decided to try the peach version of this ice cream recipe from Simply in Season. Best of all, there is no ice cream maker needed! Read on to learn how to make ice cream without an ice cream maker.

Strawberry Freezer Jam

Two flats of gorgeous strawberries (minus the couple of quarts we ate). I searched through all my cookbooks and canning books. Balsamic strawberry jam? Rhubarb strawberry jam? Strawberry jam infused with lavender? In the end I decided to take a friend’s advice and just let the strawberries shine with regular old freezer jam.

Strawberry season is much too short. There was only one vendor that had strawberries left at the farmer’s market today. I got enough for the pie and possibly ice cream, but might just eat them and make blueberry ice cream instead. That’s the joy of Simply in Season; it often provides variations so you can use what is . . . in season.

I was a bit intimidated by the prospect of making this jam, but it was in Simply In Season so I had to make it.

Raspberry or Strawberry Vinaigrette Dressing

The original recipe in Simply in Season is for raspberry vinaigrette dressing, but since I have some strawberries on my counter I thought I’d give it a try using them. Then I brought it to my parent’s house (along with some of the abundant lettuce we received from the CSA) for Sunday dinner.

This took about a quart of strawberries, so between this and the strawberry salad, plus several that I used for quality control (you MUST taste your produce to make sure it’s good, after all) I used up the two quarts from the Farmer’s Market. Now I need to find some more!

There are endless variations to this salad listed in Simply in Season , and I chose the one that most appealed to me. The base is 4 C spinach (remove stems and tear into pieces) and 1 C strawberries. But you can use any kind of greens or sliced fruit.
