10 of My Favorite Soups & Stews

OK cooking magazines, stop teasing me with your photos of steamed asparagus and strawberry shortcake. Here in Michigan we have at least three more months before the ground gives up anything new. To celebrate winter, here are some of my favorite soups & stews.

Peanut Soup with Cabbage and Chicken

I purchased a vegetable box from a local farmer who is offering produce year round-no small feat in Michigan! I decided this soup would be perfect for using the cabbage that came with it. Pin It

Winter Minestrone with Turnips, Potatoes, and Kale

This recipe is adapted from The Art of Simple Food: Notes, Lessons, and Recipes from a Delicious Revolution. As much as I don’t want it to be winter yet, I was able to use mostly produce from last week’s CSA pickup.

White Chili

While not nearly as good as my mom’s recipe for White Chili, this is a more than passable rendition.

Winter Borscht

No, it’s not winter (even though it feels like autumn outside!) I was pleased that I could use many of my CSA vegetables for this stew.

Zucchini Garden Chowder

I can always tell when DH likes the recipe, because there are no leftovers! This is a “soup”er soup that tastes like summer!

Nova Scotia Hodgepodge

OK, seriously? I have eaten more soup since starting this project than I think I ever have in my entire lifetime. Did you know there are 40 soups and stews in Simply in Season. I’ve made 32. That means I have 8 more to go. With the weather in the upper 90s (that’s 35 celcius for my Canadian readers) I am starting to doubt my resilience to finishing this project. But for now, I’m carrying on.

Fresh Pea Soup

At first I wasn’t sure exactly how I was going to make this soup from Simply in Season. I only get a handful of peas at a time from my CSA, and the shelling peas were washed away in my garden (I have plenty of snow peas though!). Luckily for me I found a little booth at the farmer’s market where they were selling peas that were already shelled! Well worth it to me.

Simply In Season calls this “Weed Soup” in the recipe notes. It’s a great way to use up CSA leftovers!

Spring Celebration Soup

I really wanted to like this soup. It used all sorts of my spring vegetables and herbs. Alas, DH said it reminded him of vomit.
