I couldn’t let egg week go by without mentioning omelets! They are so yummy, and not as difficult to make as one might think.
Marrakesh Lamb Stew

One of my favorite recipes from Simply in Season, this recipe is an excellent example of a stew. Don’t let the long list of spices turn you off – it goes together rather quickly.

In anticipation of spring and in honor of “roast” week in our Back to Basics Series, I present to you Herb Roasted Lamb with Roasted Asparagus.
Pin ItPlum Tomato Pie {Really a Galette}

When I was researching tarts for this week’s Back to Basics theme, I combed my archives and discovered Plum Tomato Pie. At the time, I described it as “Not really a pie, more like a pizza.” Now I realize it was a galette! Or tart, whichever you want to call it.
Pin ItFlavored Butter

I was able to kill two birds with one stone by making this herbed butter–I wanted to try it for sauces week, plus it’s on my list of recipes I still need to finish from Simply in Season. This one is great on baked potatoes.
Pin ItVegetarian Chili (a.k.a. bean & butternut squash stew)

My husband claims that since this has no meat in it, I cannot call it chili. Moreover, “chili” with beans is not chili, either. I’m not sure who makes up the rules, but this is called Vegetarian Chili in Simply in Season. Pin It

Fennel Leek Soup

Last week since I was out of state I gave my CSA share for the week to someone else. So, I had the unique experience of going to the farmer’s market and buying whatever I wanted. Ha! I knew I would make this soup, since I usually only get one fennel bulb at a time at the CSA and this requires three.
Great (or at least edible) Green Pasta

Now that I’m trying to wrap up Simply in Season, I’m coming across recipes that I wasn’t too interested in making last time I cracked it open. Great Green Vegetable Pasta, with its use of blended up cottage cheese (a technique I used before but don’t recall which recipe), was one of them. So I decided to wing a variation on my own.
