Sausage Asparagus Skillet

This is one of my favorites from Simply in Season, and last year when my aunt had an abundance of asparagus I gave her this recipe. Her young boys LOVED it!

Curried Vegetable Bisque

“Are you making chicken vindaloo?” DH asked when I was making this. “Nope!” I said. But it sure did smell like an Indian restaurant when I was making this! The aromatic vegetables were just heavenly, even before I added the spices. Mmmm. Pin It

Oven Fries

Skip the drive-thru, those overly salty grease sticks can’t compare to homemade sweet potato fries!

Southwestern Potatoes

This is one of those recipes I looked at and said, “What is THAT doing in the main dish section?” But then, I’ve been surprised before at the recipes in Simply in Season; sometimes vegetables are much more hearty than I give them credit for. So I made it when DH was at running group and figured he can add his chicken later.

Red Taters and Green Grannies

When I saw the title of this recipe in Simply in Season, I had to smile. For some reason it reminded me of the Red Green Show. Or maybe Christmas. Regardless, the ingredients are simple, hearty, and works as a side or main dish. Eh. It’s just one of those good recipes to have in the back of your head.

Hutspot – adapted for crock pot cooking

hutspot

According to Simply in Season, this dish originates in Holland. I vaguely remember my Grandma Leep making something similar to this. I’m disappointed now that I didn’t think to get more recipes from her when she was alive. The traditional method calls for boiling, but I didn’t have time, so I adapted this recipe for the crock pot (a working girl’s best friend!)

Easy Potato Bake

One thing about being away for a week and a half . . . you forget what’s in your pantry, cupboards, and other things you thought you had end up moldy. And so I found myself with few ingredients and a hungry DH. Always the quick thinker, DH grabbed a package of frozen brisket out of the freezer and set it in a pot to thaw. I searched through Simply in Season for a suitable side dish that I could {Read More}

Dilly Bean Potato Soup

soup

Before I started this challenge of cooking through Simply in Season, I hardly ever made soup. But over the last several months I’ve discovered that it’s one of my favorite things to make. It’s very forgiving – no tricky timings, the quantities of ingredients don’t have to be exact, and it reheats well for lunches throughout the week. Oh, and it’s usually filling while not being too many calories. I almost cried when I had to buy canned soup for {Read More}

Rutabaga and Greens Fritatta (Dark Days Challenge)

frittata

For this week’s Dark Days Challenge, I decided that I had better start using all the rutabagas that I’ve been amassing from my winter CSA. I started by looking through the recipes that Eater’s Guild had sent me. In the interest of full disclosure, I should state that DH was highly skeptical. He hates rutabagas and turnips, or so he claims. So he did go out and buy very un-local, un-environmentally friendly salmon and made it in his smoker thing {Read More}

Dark Days Challenge Fail; and Dilly Mashed Potatoes

dillymash

Please excuse the quality of this photo, as it was taken at MIL’s house at 6 PM in her kitchen on a snowy Michigan evening. I’m starting to feel like a failure at this Dark Days Challenge thing. I had a meal planned for tonight, but was not feeling well, and have a refrigerator full of leftovers. I made several items that were local over the past week, but not an entire meal. This Dilly Mashed Potatoes Dish is actually {Read More}
