We are gradually getting over our colds here at the Hammond household, but soup is still the food of choice. Since I had potatoes from last week’s CSA pickup I went looking for a soup that incorporated them. It was a bonus that this recipe happened to incorporate another of my favorite foods–mushrooms!

As you know, I’m not a big fan of “transforming” leftovers into something else; however, some recipes are quick and easy when you have leftovers on hand. This recipe is adapted from The Art of Simple Food: Notes, Lessons, and Recipes from a Delicious Revolution. As much as I don’t want it to be winter yet, I was able to use mostly produce from last week’s CSA pickup.

I’ve made this recipe from Simply in Season before (way before I started this blog). It didn’t turn out as well as I remembered – read to find out why!

OK, seriously? I have eaten more soup since starting this project than I think I ever have in my entire lifetime. Did you know there are 40 soups and stews in Simply in Season. I’ve made 32. That means I have 8 more to go. With the weather in the upper 90s (that’s 35 celcius for my Canadian readers) I am starting to doubt my resilience to finishing this project. But for now, I’m carrying on.

It’s funny, but all of a sudden we are getting spring vegetables and the weather is HOT. In Michigan sometimes it goes right from winter to summer. And here I am with a bunch of recipes from Simply in Season from winter and spring left, and are heating up my kitchen. Oh well, these potatoes were worth it!
