Pin ItI couldn’t let egg week go by without mentioning omelets! They are so yummy, and not as difficult to make as one might think.

I chose this recipe from Clean Eating Magazine because one can never have too many kale recipes. And it sounded good.

This was one of the first recipes I made when I first bought Simply in Season, and it remains one of my favorites. I just love the combination of spices.

Don’t you just love skillet dinners that you can throw together in a snap? This is just such a dish. Although it takes awhile to simmer, the amount of active time is practically nil.

This is one of the recipes I made for the potluck at the Franklin Farm. DH was quite disappointed that he wasn’t going, but he did get some leftovers.

I am SO ready for the spring recipes in Simply in Season. Alas, I have a few of the winter recipes remaining. However, I’ve noticed that things like beets and apples and carrots will be available in the summer as well, so as long as I don’t get too far behind in the total number of recipes, I may just indulge myself with a few of these springtime dishes before finishing the winter recipes. This is one of those recipes I looked at and said, “What is THAT doing in the main dish section?” But then, I’ve been surprised before at the recipes in Simply in Season; sometimes vegetables are much more hearty than I give them credit for. So I made it when DH was at running group and figured he can add his chicken later.

When I saw the title of this recipe in Simply in Season, I had to smile. For some reason it reminded me of the Red Green Show. Or maybe Christmas. Regardless, the ingredients are simple, hearty, and works as a side or main dish. Eh. It’s just one of those good recipes to have in the back of your head.
