This is seriously my favorite way to have mixed greens yet! I am definitely acquiring a taste for the bitters, and this pizza was fabulous.

I looked over the recent recipes I’ve posted, and boy, am I getting lazy! And despite my best efforts, I have not made a dent in the greens. I’m going to have to freeze some. My next pickup is tomorrow, yikes. I find myself putting greens in EVERYTHING. As an example, here’s my go-to breakfast during CSA season.

Pasta with Bacon and Mixed Greens

Here’s another super easy (and fast) “recipe” that I made up this past weekend. I have discovered that I much prefer to use the spicy salad green mix in cooked form rather than try to eat a salad that makes my eyes water. A quick saute’ makes the heat much more bearable.

Crustless Zucchini Tomato Quiche

Veggie Burrito Bake

The original recipe from Simply in Season calls for 16 cups of spinach. Unfortunately I don’t get near that much spinach from my CSA. But you know what I do get oodles of? Swiss Chard! So I substituted two bunches of Swiss Chard (one from last week’s pickup, one from this week’s) for this dish.

Grilled Sausages with Baby Turnips and Turnip Greens

So I had these spring turnips from the CSA pickup and no recipes in Simply In Season that called for them. Lucky me, I have a couple of cookbooks in my “to review” pile. I found a recipe in Eating Local: The Cookbook Inspired by America’s Farmers that sounded good. (Look for the review next Friday!)

Three Pea or Greens Stir Fry

Although the title of this recipe from Simply in Season is Three Pea Stir fry, I’m doing the greens version. I have some bok choy that should be used up from my CSA pickup. I planted some peas, but they are not up yet. The CSA u-pick peas have not started yet. Some peas are available at the farmer’s market but I figured hey, why not use what I have? Now that’s a novel concept!

While the title of this recipe is Dandelion Bacon Salad, Simply in Season says you can use any kind of greens. Good thing; while I do have dandelions in my yard, I do have two dogs. Our neighbors also have dogs. So I felt much safer just using some of the greens that came with my first CSA pickup.
