This is quite a versatile recipe; you can make it in a slow cooker, or bake it, or microwave it if you really want to. It’s a great way to sneak in more vegetables.

I can always tell when DH likes the recipe, because there are no leftovers! This is a “soup”er soup that tastes like summer!

This is one of those recipes I looked at and said, “What is THAT doing in the main dish section?” But then, I’ve been surprised before at the recipes in Simply in Season; sometimes vegetables are much more hearty than I give them credit for. Much to my husband’s dismay, these peppers contain no meat and were not particularly filling. So if you have a husband or an appetite, you might want to double the recipe.
