I’ve made this recipe from Simply in Season before (way before I started this blog). It didn’t turn out as well as I remembered – read to find out why!

OK, seriously? I have eaten more soup since starting this project than I think I ever have in my entire lifetime. Did you know there are 40 soups and stews in Simply in Season. I’ve made 32. That means I have 8 more to go. With the weather in the upper 90s (that’s 35 celcius for my Canadian readers) I am starting to doubt my resilience to finishing this project. But for now, I’m carrying on.

It was with much fear and trepidation that I made this recipe from Simply in Season. But hey, I made a deal with myself – do all the recipes, except the cranberry ones (I’m allergic) and those featuring ingredients I couldn’t find locally (persimmons being one). When I saw another recipe for taco filling in Simply in Season, I wondered why. I mean, how many taco recipes does one need? But this lightened-up version is just the ticket to sneaking vegetables into your family’s dinner.

Another one of the recipes from Simply in Season that I looked at and said “huh?” But I’m glad I tried it, as this simple salad is refreshingly good.

“Are you making chicken vindaloo?” DH asked when I was making this. “Nope!” I said. But it sure did smell like an Indian restaurant when I was making this! The aromatic vegetables were just heavenly, even before I added the spices. Mmmm. Pin It
