Chicken Fried Steak {Dark Days Challenge}

steak

I’ve never had chicken fried steak before, although I’ve seen it in restaurants. I always wondered why it was called chicken fried if it was steak. When I received a couple of cube steaks in my meat box at the co-op, I decided to give it a try. Pin It

Beer Cheese Soup

I love it when DH gets inspired in the kitchen. Yesterday, he wanted to make beer cheese soup. It turned out delicious!

Venison with Swiss Chard Orzo

venison

I feel like such a poser. For some reason I’m attracted to vegan and vegetarian cookbooks. And when I wanted to make something to go with the venison steaks DH would be grilling? I Googled “kale with pasta and pine nuts” I ended up at Two Little Vegans.

Borscht and Beef Pasta

I was tempted to make scallops with white wine, capers, and tomatoes the other day; but I decided instead to figure out something to make with the beets sitting in my garage. I was pleasantly surprised to discover this recipe from Good Housekeeping.

10 of My Favorite Soups & Stews

OK cooking magazines, stop teasing me with your photos of steamed asparagus and strawberry shortcake. Here in Michigan we have at least three more months before the ground gives up anything new. To celebrate winter, here are some of my favorite soups & stews.

Pot Roast Under Pressure

If it’s possible to love an appliance, then I’m smitten with my pressure cooker. Forgot to put something in the slow cooker in the morning, and it’s almost time for dinner? No problem with a pressure cooker!

Roasted Parsnips with Balsamic Vinegar and Rosemary

parsnips

Pay no attention to the burnt parsnips in the photo; they tasted delicious, even if a bit overdone. Don’t blame the recipe; I’m sure you’ll pay more attention than I did!

10 Favorite Root Vegetable Recipes

I can understand why people would get frustrated trying to eat local in the winter. Many of the healthy cookbooks call for produce that’s out of season, and many of the farm to table cookbooks have a very scant section for winter root vegetables. And so I find myself missing all the recipes from Simply in Season.

Peanut Soup with Cabbage and Chicken

I purchased a vegetable box from a local farmer who is offering produce year round-no small feat in Michigan! I decided this soup would be perfect for using the cabbage that came with it. Pin It

Brussels Sprouts with Brown Butter

sprouts

It was a little weird buying brussels sprouts already off the stem, one row over from asparagus in December. The tag told me it was from California; I had my doubts, but really wanted sprouts and since I’ve been traveling haven’t had a chance to get to the indoor winter farmer’s market. So California sprouts it was.
