
This is the second peach pie I made last weekend. How did it compare?

Last Saturday I canned a LOT of peaches. Even though I’ve canned before, there were a few lessons I learned that I thought I’d pass along so you don’t have to learn the hard way.

DH doesn’t like jam, but this recipe was in Simply in Season so I had to make it. I’m glad I did! Blueberry Raspberry Jam is summer in a jar.

This is quite a versatile recipe; you can make it in a slow cooker, or bake it, or microwave it if you really want to. It’s a great way to sneak in more vegetables.

When I was a little girl, I wanted to be a veterinarian; or a writer. I grew up to be neither, although I do love to write (and pursue it as a hobby) and I have two dogs and two cats. My husband and I agree that we probably spoil our “babies” way too much. Perhaps it’s because we’re childfree. Hal Herzog, author of Some We Love, Some We Hate, Some We Eat, might have some other theories.

It feels great to be back in the kitchen! After a hiatus from Simply in Season, I’m motivated to tackle the remaining 54 recipes. This one is super fast, cheap, and tasty! Best of all, it features some of summer’s best vegetables.

In the previous post I talked about how the church in Kabale is doing incredible ministry in its community. On Day 8, we visited the church’s nursery school and met with its youth group, men’s group, and women’s groups. It was neat to see how similar the issues are cross-culturally. Then, on Day 9, we drove to Rwanda. I had tried to prepare myself for the grisly scenes to come.

On Days 6 and 7, we visited two of the communities in which HIV and AIDS ministry is being done through Kabale PAG. CRWRC chooses to do development work primarily through local churches. It’s incredible how God is using His church to accomplish so much.
