Drunken Asparagus with Feta and Prosciutto

drunken

DH came up with this recipe after we saw something similar at a local restaurant. The challenge was a homebrew party where you had to either make something with beer or pair it with beer. This recipe did both, and won 3rd place (as judged by Michigan Beer Blog).

Strawberry Freezer Jam

SAMSUNG

Two flats of gorgeous strawberries (minus the couple of quarts we ate). I searched through all my cookbooks and canning books. Balsamic strawberry jam? Rhubarb strawberry jam? Strawberry jam infused with lavender? In the end I decided to take a friend’s advice and just let the strawberries shine with regular old freezer jam.

Celebrating Freedom: 2 1/2 Weeks Until Uganda

Yesterday I was editing newsletters from our overseas staff, and became very grateful for the freedom and security that we enjoy in America. I know that not everyone is food secure; there is poverty here too. But reading some of the stories reminded me that we have much for which to be thankful.

Garden Update 6/28/11

I just realized that I haven’t given a garden update in awhile. We’ve been getting LOTS of rain this year, which means I haven’t had to water. Which is nice.

Tuna Salad with Garlic Scape Pesto and Kale

salad

I’ve had this recipe in my head for awhile now. A pasta salad with tuna and Mediterranean flavors. On Saturday, my husband spent much of the day trimming trees in our backyard and then picking up the branches. Since I wasn’t sure when he’d take a break for lunch, I decided it was a great [...]

A lot of people think I’m Mennonite, perhaps because I have had a study series on Simply in Season and Living More with Less on my blog (both published by the Mennonite Central Committee). While I love the Mennonites, I have to confess that I’m Christian Reformed (a branch of Presbyterianism). So I was glad [...]

Scallops with Garlicky Rainbow Chard

chard

I love it when dinner is a team effort. DH decided to make scallops, so I pulled out a bunch of Swiss chard that I had just picked up from my CSA. In no time at all we had a delicious dinner on the table.

Chard Wrapped Chicken

My husband was so excited that I finally made a dinner that featured meat. I was excited that I was able to use up more of the greens that seem to be multiplying in my refrigerator.

One Month Until I Leave for Uganda!

The passport is off getting a VISA stamp. A prescription for malaria meds is in my purse. I’ve been scouring REI and Sierra Trading Post for clearance quick-dry underwear and trying to decide how many books to take for the more than 24 hours of travel time each way. (Unless, of course, someone wants to give me a Kindle!)

Quinoa with Spinach and Feta

quinoa

This year we have been getting a lot of spinach with our CSA share. I don’t remember getting this much in the past; I think we used to get a small bunch with the root attached on occasion. But this year I’ve gotten a pound and .6 pounds of cut spinach the past two weeks. [...]
