
This is what’s called a team effort for dinner. Sometimes DH just is not in the mood for what I had planned to make, so we put our heads together and see what we can make with what we have on hand.
Eating and living locally . . . mindfully . . . simply.

When I decided to remake the banana cream brownie squares, I knew I’d try to make my own whipped cream. However, since I’ve been unsuccessful with making butter, I bought a back-up tub of Cool Whip just in case.

I think I’ve mentioned that I used to sell Pampered Chef, where the recipes were adapted to make in front of a live audience to sell the product (the cookbooks have an index by product, no kidding!). This past Easter, my mom and sister requested that I make one of the desserts I used to make quite a bit from the Pampered Chef Casual Cooking cookbook.

Once in awhile I’m contacted by publishers to see if I’ll review their books on my blog. Since I LOVE to read, I usually oblige. So when Tim Young contacted me to review his book The Accidental Farmers: An Urban Couple, A Rural Calling, and A Cream of Farming in Harmony with Nature, I didn’t think anything of it. Little did I know how thought-provoking the experience would be.

Happy Good Friday? Might seem like an odd greeting. But yes, Good Friday makes me Happy. Jesus didn’t stay on the cross.

I love holiday dinners with my extended family because we do it potluck-style. Without fail, on Easter we will have ham,cheesey potatoes, seven layer salad, deviled eggs, and lime pie along with whatever else we feel like making that year. Depending on who is coming, the standards are divvied out and then it’s up to the adventurous cooks to fill in the gaps.

Sometimes, disaster leads to something even better. Like when I was going to make Cialntro-Lime Quinoa with Shrimp and Kale, and discovered that it’s not a good idea to blog and cook at the same time.
