Venison with Wild Rice & Mushroom Sauce

This was a perfect dinner to end a snow day. Best of all? DH cooked it!

I found some wild rice mix in the cupboard that I had forgotten about, so I made it in the rice cooker while DH did the rest.

He looked online at various mushroom sauces and came up with this version:

  • 4 C beef stock
  • 3 C dried mushrooms (I love the wild mushroom mix canister from Costco)
  • 2 Tbsp Worcestershire
  • 1 shallot (minced)

Bring to a boil, lower to a simmer while you grill the venison steak (medium, seasoned with salt, pepper, and garlic).

When the venison is finished, let rest while you finish the mushroom sauce by adding

  • 1/4 C f lour
  • 1 Tbsp butter

It was so delicious, it made me feel like I was in the North woods and not snowed in my suburban house. My favorite kind of recipe! I did make a mushroom sauce from Simply in Season last April, but I like this version a LOT better. The other version had cornstarch, which I found a bit gummy in comparison.

    Did you buy your venison or did your DH go hunting?
    We don’t hunt, but we usually get some venison from a friend. None this year though :(

    This sounds so good. I think I’ll pass this recipe along to my daughter – her fiance hunts and always has venison in the freezer. Can you buy the dried mushrooms somewhere besides Costco? Perhaps at Meijers?

    • I haven’t looked for them anywhere else, but you could probably use fresh mushrooms – just saute’ along with the shallot and maybe a bit of butter before adding the stock.
