Recently I was sent Green Market Baking Book: 100 Delicious Recipes for Naturally Sweet & Savory Treats for review (only $10.76 on Amazon!). I haven’t finished my review as there are still some recipes I want to try, but I thought I’d share the recipes as I make them.

4 Tbs butter, divided
3/4 cup cornmeal
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
1 cup blueberries (can be frozen)
3/4 cup milk
1/4 cup honey
1 large egg
1. Preheat oven to 350F. Melt 2 Tbsp of the butter in an 8 inch skillet.
2. In a large bowl, combine dry ingredients. Add blueberries.
3. In a smaller bowl, combine the wet ingredients, including the remaining 2 Tbsp melted butter.
4. Pour into pan and bake at 350F for 25-35 minutes or until toothpick inserted in center comes out clean.
Servings: 8
The Verdict: While tasty, it was a bit on the dry side. I think I should have served it with some milk or yogurt. It wasn’t overly sweet, but the cornmeal lent a nice flavor. I wouldn’t have thought to put blueberries and corn together, but it totally works.

I do love the combo of cornmeal and blueberry…I use it in pancakes sometimes! This sounds delicious and bet that yogurt definitely would have lent the needed moisture. Yum! Thanks so much for sharing it w/ the hearth and soul hop this week

This looks yummy. Besides milk or yogurt, I’d probably serve it with a small dollop of fresh whipped cream.
