This recipe from Simply in Season wasn’t too difficult at all, and a fresh jar from summer will be a welcome treat in the winter.

14 cups tomatoes (peeled, chopped, and drained)
3 cups onion (chopped)
1/2 cup chili peppers (chopped; use more if you want it hotter)
1-3 cups green, yellow, and red sweet peppers (chopped)
8-10 cloves garlic (minced)
1 cup tomato sauce
1 cup ketchup
3/4 cup vinegar
10 Tbs cornstarch or Thermflo
2 1/2 tbs salt
1 Tbs chili powder
1 1/2 tsp ground cumin
1. Combine tomatoes, onion, peppers, and garlic and set aside.
2. Combine tomato sauce, ketchup, vinegar, cornstarch, salt, chili powder, and cumin and cook until thick and a clear dark color. Add sauce to drained vegetables and ladle into hot sterilized pint jars to within 1/2 inch of top, seal with sterilized lids, and process full jars in boiling water bath for 35 minutes.
Servings: 36
Yield: 9-11 pints
The Verdict: I wasn’t so sure about the cornstarch mixture. As I was cooking it, I seriously had some doubts. But I kept cooking, and eventually it became very thick and dark. It wasn’t until I mixed it with the vegetables that it seemed to smell the way a salsa should. Silly me, I need to have trust in the recipes. The only bummer part is that some didn’t seal, apparently because I overfilled a couple of them because it was leaking when I went to fish them out of the water bath. Oops.

Have you tried the salsa yet? Curious to know your thoughts. There are still a couple of weeks left to squeeze in some tomato canning before they disappear from my state for the winter!

yes, it’s very good! A much fresher flavor than I thought it would have.
