Cream Soup Substitute

From time to time, I’ve taken liberties with this Simply in Season experiment. Like when I had guest posters make the cranberry recipes because I’m allergic to cranberries; or decided to forgo the persimmon recipes because I couldn’t find them locally.

When I first saw the Cream Soup recipe, I thought to myself, “Cream soup? I only use that for green bean casserole.” Recently, I received a review copy of The I Hate to Cook Book and what do you know? LOTS of recipes that call for cans of cream soup!

Alas, upon further inspection of the Simply in Season recipe, I realized that it contains vast amounts of cornstarch and dry milk powder, neither of which I consider super healthy. It also made enough for 8 cans’ worth; what the heck would I do with THAT? So I decided to Google it and came across a different cream soup substitute.

The Recipe: Melt 1 T butter; add 3T flour and stir until smooth; add 1/2 C chicken broth and 1/2 C milk and stir again until smooth.

The Verdict: It worked! When I made the Skid Road Stroganoff, I started the noodles and made the cream soup while the venison was browning. At first, I stirred and stirred and it still looked runny. Then I went to finish up the rest of the venison/onions/etc. and by the time I went to grab the soup it had magically gelled! Yay! The texture was there. And it tasted great.

  1. Skid Row Stroganoff?! That’s hillarious. I hope this works; I have only seen the corn starch/powdered milk variety and I am trying to “healthy up” a chicken and rice bake family recipe that involves Cream of Somethin’ Soup (as do all of my family recipies…)

I have a zucchini casserole I want to try which calls for cream soup, and we use minimal milk in cooking (my hubby is allergic), so cream soup, condensed milk, and all of that, are out. I was thinking of trying something just like this, and now you’ve done the work for me! Another reason I love your blog, we often seem to be on the same page!

  6. Hey – this is great! I don’t have many recipes that call for it (as I guess I just pitched them) but now I have an alternative! Do you have any good ones you can share? I think stroganoff is one of those things that my flexible husband will not eat.
