Zucchini, just like tomatoes, are easy to grow. Therefore people plant a lot of it, greatly overestimating how much they need. Everyone is trying to give it away towards the end of the summer; beware of strangers carrying paper bags. If you find yourself with too much zucchini, try these 10 ideas:
- Grate it and freeze it for later.
- Hide it in desserts, such as Zucchini Brownies. Chocolate, like cheese, makes everything taste better!
- Roast it with other vegetables.
- Grill it in a foil packet with fish.
- Hide it in tacos/tortillas.
- Make zucchini bake.
- Throw it in a quiche.
- Make it into a relish (recipe coming soon!)
- Slice and dehydrate for a healthy snack.
- Throw it in soup.

Zucchini, Walnut & Swiss Cheese Salad
½ c. parsley leaves chopped
½ c. chopped toasted walnuts
½ c. basic vinaigrette
1 t. Dijon mustard
2 lg. zucchini, shredded
¼ # Swiss cheese, shredded
Freshly ground black pepper
Basic Vinaigrette:
¾ c. olive oil
¼ c. red wine vinegar
1 t. salt
Toss all together and serve immediately.

We love to marinate zucchini in a little in Ken’s Italian Dressing and grill it.
Long time reader, first time commenter here. These are 2 of my favorite ways to use up zucchini:
Make zucchini ribbons with a potato peeler and quickly steam to soften to “al dente” texture, then serve with your favorite pasta sauce. Works really well with cream based sauces.
Mix up a dressing of lemon juive and zest, olive oil, minced shallot, dill, and S&P. Drizzle over thinly sliced raw zucchini and crumbled goat cheese. Sounds strange, but it’s amazing!
Oops, I meant to type “juice”, not “juive”, lol.
