What Do I Do with Too Much Zucchini?

Zucchini, just like tomatoes, are easy to grow. Therefore people plant a lot of it, greatly overestimating how much they need. Everyone is trying to give it away towards the end of the summer; beware of strangers carrying paper bags. If you find yourself with too much zucchini, try these 10 ideas:

  1. Grate it and freeze it for later.
  2. Hide it in desserts, such as Zucchini Brownies. Chocolate, like cheese,  makes everything taste better!
  3. Roast it with other vegetables.
  4. Grill it in a foil packet with fish.
  5. Hide it in tacos/tortillas.
  6. Make zucchini bake.
  7. Throw it in a quiche.
  8. Make it into a relish (recipe coming soon!)
  9. Slice and dehydrate for a healthy snack.
  10. Throw it in soup.

Just for fun, let’s link up all our zucchini recipes! Let’s see how many we can get.

Long time reader, first time commenter here. These are 2 of my favorite ways to use up zucchini:

Make zucchini ribbons with a potato peeler and quickly steam to soften to “al dente” texture, then serve with your favorite pasta sauce. Works really well with cream based sauces.

Mix up a dressing of lemon juive and zest, olive oil, minced shallot, dill, and S&P. Drizzle over thinly sliced raw zucchini and crumbled goat cheese. Sounds strange, but it’s amazing!

I missed this last week – I have a few ideas to throw into the mix: http://mydailyround.blogspot.com/2010/08/zucchini-ideas.html

I tried dehydrating the zucchini last week, but I think I sliced the pieces too thinly. They stuck to the trays. I’m going to try again this week.
