Top 10 Things to Do with Random Vegetables

People sometimes complain about getting only a single zucchini or tomato in their CSA box. What can I do with just one? They ask. Oh, the things you can do with just a few seemingly random vegetables! Here are my top 10:

  1. Soup
  2. Salad
  3. Raw (as a snack)
  4. Omelet
  5. Stir Fry
  6. Cold Pasta Salad
  7. Tabbouleh
  8. Casserole
  9. Juice it
  10. Smoothie

Any other ideas?

  2. Right now I am currently saving all of my vegetable scraps in a freezer bag in my freezer for making vegetable stock…

    I usually do the casserole, soup, salad, burrito, or throw it in the spaghetti sauce. I made some of the best marinara sauces ever, throwing random vegetables in.
