Spring has sprung! It seems like overnight the farmer’s market is suddenly bursting with lettuce, spinach, and strawberries. I can finally get started on the spring recipes from Simply in Season like this one.
FOR PRINTABLE VERSION CLICK HERE: Spinach Squares
1 cup milk
1/2 cup whole wheat pastry flour
1/2 cup flour
1 tsp baking powder
2 cups cheese (shredded)
8 ounces fresh spinach washed, dried and torn
1. Mix together everything except the cheese and spinach.
2. Mix in the cheese and spinach, and press into a greased square baking pan. Bake in a preheated oven at 350F until a knife comes out clean, about 30-35 minutes 40-45 minutes.
The Verdict: Very tasty and filling, the spinach is not overpowering at all. DH added even more cheese on top after it was cooked. It kind of reminds me of a crustless quiche, except a bit of a crust is formed where the bottom touches the stone while baking. (I do most of my baking in stoneware).
