Barbecued Beef

For some of the recipes in Simply in Season that serve a crowd, I try to make them when we will be able to share the meal. Such an opportunity arose this weekend when we went camping with our friends.

2 lbs stewing beef or venison
2 large onions, sliced
1/3 cup water
1/2 cup ketchup
2 Tbs vinegar
2 Tbs Worcestershire sauce
1 Tbs brown sugar
1 tsp salt
1 tsp paprika
1 tsp chili powder

1. Place meat and onions in a baking dish or crock pot.

2. Mix together remaining ingredients and pour over meat and onions. Cover and bake at 325F for 2-3 hours or put everything in a slow cooker and cook on low for 8-10 hours.

3. Shred the meat with two forks. The meat will soak up more of the juices as it is shredded.

The Verdict: This is another recipe that I made ahead of time and simply brought up to the camper in a plastic bag so I could use the crock pot method. Everyone loved this BBQ, although there was some discussion as to whether or not it needed more flavor. And we got into a heated discussion about whether Open Pit or Manwich is tasty or not. One thing is for sure, this is much healthier than either of those two options, and the flavors don’t overpower the meat.
