Tangy Carrot Chowder: Dark Days Challenge

Whaaa? Carrots in chili? Why yes, and they are quite good. If you have a food processor with a shredding blade, this is a snap to throw together!

I realized that I won’t be doing much cooking this week, so I am making this my Dark Days Challenge submission. We are putting new tile and laminate on our first floor, so my kitchen and dining area are all torn up. Plus, DH and I are going to be taking a Valentine’s Day Cooking class this weekend! I’m so excited!

from Simply in Season

1 lb ground beef (actually used ground venison from DH’s successful hunt last year)
4 cups tomato sauce (not local, next year I really need to can though)
1 can cream of celery soup (not local)
2 1/2 cup carrots, shredded (Michigan carrots)
1/2 cup celery, chopped (not sure)
1/2 cup onion, chopped (from winter CSA)
1/2 cup green pepper, chopped (frozen)
3 cloves garlic, minced (from CSA)
1/2 tsp celery seed (not local)
salt and pepper to taste (not local)
1 1/2 cups water (local ;-)

1. Brown the ground beef in a large soup pot.

2. Add vegetables and cook until tender, about 20-30 minutes. Can garnish with swiss cheese.

Servings: 6

The verdict: If it had beans, you’d think it was chili. But it doesn’t have beans, it has carrots. Crazy, huh? But DH and I ate lots of it. The carrot flavor wasn’t very pronounced, but it did give the chili a lighter flavor profile than your regular run of the mill chili. If you have kids that won’t eat vegetables, this is a great way to hide them!

    I have the Simply in Season cookbook. Thanks for the suggestions of recipes to try! I made the chowder today and it is very good! Didn’t have cream of celery soup on hand so used the recipe for Cream Soup Substitute (it’s in the book) and added a bit more celery to the soup.

    Not sure why you’rs calling it chili when it’s a soup. I made this a few weeks ago, but found it to be just OK as a soup. It’s very similar to spaghetti sauce.

    • I know it’s called soup, but DH and I agree that mine turned out much more like chili with carrots in it. I wonder what the difference between soup and chili is, anyway? Oh well, it was great with crackers and shredded cheese :-)
