Oven Barbecued Chicken (Dark Days Challenge)

You know, it was SO tempting to not just use some of the leftover barbecue sauce from last weekend’s brew and BBQ. But I wanted to be true to the recipe from Simply in Season. So I made the chicken, and with the remains of the homemade BBQ still in the skillet I added 1/2 C of water and let a head of collards and a head of kale steam while the chicken baked.

Oven Barbecued Chicken

4 8-ounce chicken breasts (Byron Center Meats)
1/3 cup onion chopped (Winter CSA)
3/4 cup ketchup
1/2 cup water
1/3 cup vinegar
3 Tbs brown sugar
1 Tbs Worcestershire sauce
2 tsp mustard
1/4 tsp salt
1/8 tsp pepper

1. Brown the chicken in a large frypan in a small amount of oil. Place in baking dish.

2. Saute’ the onion in the frypan until tender.

3. Add the remaining ingredients to the frypan and simmer uncovered for 15 minutes. Pour over the chicken.

4. Bake at 350 until the chicken is no longer pink.

Servings: 4

The verdict: This chicken was very satisfying. I think making your own barbecue sauce is worth it. As DH said, “it’s no Baby Ray’s.” It’s different, but a wholesome kind of different. Another plus, when you have the ingredients to make the sauce, you don’t have to go out and buy another bottle of something to keep in the refrigerator. That’s definitely something I’m learning from this challenge of cooking through Simply in Season. With just a few pantry essentials, it’s possible to create a huge variety of dishes.

I am not crazy about BBQ sauce cause most of it is so stinkin’ sweet! I much prefer making my own so I can control the sweetness. Plus, like you, I am thinking about one more bottle of crap sitting in the fridge door!
