Chunky Crunchy Granola

granolaI’ve wanted to make granola for a long time now. It’s one of those things that everyone says is so easy to make, so healthy, and delicious. Today I decided to take the plunge.

I chose a recipe that seemed pretty easy, and it was. Simply mix together in a large bowl 3 C rolled oats, 1 C whole wheat flour, ¼ C brown sugar, 1 ½ tsp ground cinnamon, ½ tsp salt,  1/4 tsp ground ginger, and 1 ½ C raisins (you could also add nuts or substitute other dried fruit for the raisins). 

Then, add ¼ C oil, ¼ C honey, ¼ C milk, and stir until all the flour is incorporated. If you need to, you can add a tablespoon more of milk.

Bake at 300F for about an hour, stirring every 10 minutes, until it’s light brown. According to Simply in Season, you can store it in an airtight container for a week or freeze it.

The verdict: Oh wow, this turned out quite delicious! Not too sweet, perfect for a quick breakfast or snack. I will definitely be experimenting with future add-ins. And I will probably never buy ready-made granola again, now that I know how fast and inexpensive it is to make from scratch.

Oh yum! I have a maple walnut granola I tend to fall back on (in my blog) but this looks like a nice change — the addition of pepper is very interesting to me!

Oops! That should have been ginger, not pepper. Sorry about that!
